Arnold Adventures

As of July 1st we have made it one full year in our house. It has been a HUGE year for us with the new house and baby so we have paced ourselves on our fixer upper but I think we managed to do a lot in a very small amount of time! Going forward we will be sharing our home progress here!

We are going to start with the outside.

The outside has not changed too much but in a lucky turn of events we did manage to get a new roof because of a terrible hail storm. We also outfitted the garage door with carriage fixtures. On one day during Millie's nap-time we backbreakingly lined the right flower bed with stones that we had a pile of in the back yard! It was a hard but free project that I think adds to the curb appeal.

We do not have a before picture of the front porch. Here is the after. Not much has been done except for adding some Boston ferns, Adirondacks, tables and lanterns. The biggest transformation we made was paining the ceiling haint blue! If you're not familiar with this tradition you should look it up! We had the house pressure washed so as soon as the ceiling was dry we slapped on a coat of Benjamin Moore Polar Sky. We both couldn't be more pleased. It is a fantastic place to have a cup of coffee in the morning or a cocktail in the evening!

Last Sunday we had the pleasure of exploring northern Greenville county and the Poinsett Bridge. If you're ever up Highway 11 you should check out this gem of the upstate. It is free to visit and is just beautiful. Poinsett Bridge was built in 1820 as part of a road from Columbia, South Carolina to Saluda Mountain and is one of the oldest extant bridges in South Carolina. The bridge includes a 14-foot Gothic arch and stretches 130 feet over Little Gap Creek. Though no longer in use, the stone bridge remains largely intact. The bridge is part of the 120-acre  Poinsett Bridge Heritage Preserve and was named to the National Register of Historic Places in 1970.

The area around the bridge is so serene and you can just visit for a few minutes as there isn't too much there to see or you can sit on a rock and observe the wildlife for as long as your heart desires. There is great parking and the bridge is extremely easy to access. It really is a beautiful setting in a lush forest that is quite peaceful. Check it out if you're in the area. 





We are enjoying exploring very much! There is so much to see and do here and we cannot wait to tap into everything we have available to us here!

And we're back! After a couple of crazy weeks including moving across four states(with the truck breaking down and everything), moving into a new(very old) house that needed a ton of work, and starting a new job(Jen), we are finally feeling somewhat settled here. With that said we decided that this past weekend we needed to get out of the house for some fun. Our original plans were to go kayaking but that was squashed as the weather was storming on Saturday and the temperature did not reach 65 degrees on Sunday. We decided instead to do a little exploring just a few miles up the road...

Campbell's Covered Bridge is the last remaining covered bridge in South Carolina. It is owned by Greenville County, which closed it to motorized traffic in the early 1980s. The bridge was added to the National Register of Historic Places on July 1, 2009.   Constructed in 1909, the 38 foot long, 12 foot wide pine structure that spans Beaverdam Creek was built by Charles Irwin Willis. Locals believe that the bridge was named for Lafayette Campbell, who at the time of the bridge’s construction owned 194 acres in the immediate area. It is only 15 miles from our current home which makes for a nice little Sunday ride. We decided to stop here on our way to Tryon, NC, to eat dinner, as it is very accessible from the highway and free to enter (a major plus). Greenville Rec has transformed it into what they call a passive park. There are nice picnic tables and even a short hiking trail. The park is very well maintained and worth a visit! We plan to make another trip out there when the leaves turn!

Phifer Hall at Converse College(Jen's new workplace)
We have made it to South Carolina! It has been about a week since we've arrived and the entire time has been spent unpacking, cleaning, and working! We haven't had much time for fun but we plan on doing that soon! Here are some pictures that we've snapped this past week of our new home state!

Big news out of our camp! We're taking this show on the road, all the way to, wait for it.......

SOUTH CAROLINA



This move has been a long time coming. We thought we would be leaving Mississippi in the spring of 2012 but things did not happen that way. With that said we have had an amazing four(Jen) to five(Mike) years in Mississippi and if we had not stayed here then we probably wouldn't be able to take this amazing opportunity. Good things come to those who wait!

We couldn't be more thrilled to be moving to a new state(Jen's home state) and to be starting a new chapter of our lives! South Carolina is one of the most geographically diverse states in the nation with beautiful mountains, beaches and plenty in between! Starting in September we'll be sharing a generous amount of adventures pertaining to the state of SC and the surrounding areas!

Last week I shared the collard greens I prepared for our New Year's feast and today I am sharing the recipe for the Hoppin' John that we had to go along with the greens! This recipe is as simple as it is tasty! Hoppin' John is considered a Low Country food and I have grown up eating it all my life in South Carolina. I am not really a fan of blackeyed peas but the rice and the seasoning that the bacon gives really accompany them so well that I do not mind them at all in this dish! As you make this dish your home will smell delicious as the scent of bacon reminds me of home! Feel free to try your hand at some traditional South Carolinan food!

Hoppin' John

Ingredients
  • 2 Tablespoons bacon drippings
  • 1 cup cooked white rice
  • 2 cups cooked and drained black eyed peas
  • 3/4 cup diced sweet onion
  • 2 tablespoons chicken stock(reduced sodium)
  • Salt and Pepper to taste
Directions
  1. In a large skillet fry 3 slices of center cooked bacon. Remove bacon (crumble to use on a salad or something later or you can just eat it). 
  2. While you're frying the bacon cook the one cup of rice in a rice cooker or on the stove.
  3. After the bacon is removed, saute the onion in the bacon drippings for about 5 minutes.
  4. Add the peas and cooked rice until heated through and add the chicken stock and stir
  5. Salt and Pepper to taste
  6. Enjoy!

Last weekend Mike and I traveled to South Carolina for my ten year high school reunion. It was a quick 36 hour trip but we had an amazing time hanging out with old friends and seeing some that I had not seen since the day we graduated. Everyone had really changed and some lead some really exciting and intriguing lives! Little ole' me won the superlative for Most Changed which was pretty awesome! I always love going home as it gives me a feeling inside like no other. Everything is green, there are mountains in the distance and the air just feels cooler and crisper there.

Mike's 25th Birthday lunch at the Arnold's! 
I am a bad blogger. It has been a while since I have checked in probably because this is a highly stressful time in our household. That does not mean that nothing fun has been happening it just means that I have a lot more things taking up my time that are not as fun :( However, I want to do a quick catch up post with mostly pictures to give a little insight into what we have been doing since my last post.
My student researcher presented our work at a
student symposium here on campus. I am so proud of her!

My Master boyfriend!! So proud of him and we were both so happy that day!

We have some fun things coming up. We are headed to PTC to see Mike's brother Danny graduate from High school soon and to spend time with the family. I plan to go and visit the HGTV Green Home while I am there as well(this is right up my alley) and I cannot wait! My fingers are still crossed about the future. Waiting is so very hard and straining on your mind though.

Wow I am behind...here is is almost February and I have yet to blog about my holiday trip. Oh well I have been busy and life is getting crazier by the minute! As you can see on the map above we had quite the journey over the holiday season. It was about 3200 miles and a lot of fun. We spent time with friends and family and it was just good to get out of here for a while. I have been recovering from this journey for a few weeks lol.

On another note, the new year has come and gone and I am back on the healthy train(although I really never got off). I maintained my weight loss over the holidays(YAY). And I am well on my way to making my January fitness goal I set for myself which entails going to the gym 20 times this month. Which I should surpass! The scale has not budged even though I have eaten like a bird for the most part. I have to figure this out soon before I go crazy!! I have started going to Zumba again twice a week and I am so enjoying it. If you know me then you know I love to dance so this is more fun for me than traditional workouts.

Other than that nothing is going on with me. On the other hand Mike is busier than ever. He has worked harder than I have ever seen him. He has been staying up late finishing his thesis and getting ready for his defense which is scheduled for Feb 3! I am so proud of him already and cannot wait for all of this to be over so he can have this off of his chest.
I am going to try to blog more especially because I think this year is going to be important. Hopefully we will move and start a new chapter of our lives together what I believe will be the most important one yet!
