Arnold Adventures

Of course we've shared pictures of our baby girl Pumpkin!! She has been super loungy and snugly this winter. She has been enjoying the milder temperatures we've been having as of late! However, she is not nearly as excited about becoming a big sister as we are about having a child. 

Mike has been enjoying using his Big Green Egg! He is keeping the pregnant woman fed which is a super plus. He has now prepared beer can chicken, ribs, pulled pork(Boston butt), burgers and pizza. The burger above is an infamous Jucy Lucy and it was amazing!

The weather this year has been blah to say the least. We've had two snow events and one ice event. Us Arnold's are warm weather lovers so we had to just grin and bear it. Spring is in the air though judging by the beautiful purple blooms in our flower beds!

Although we've kept a low profile these last few months due to the winter cold and the baby we have not missed a meal! We have had some fabulous meals out and at home. We've dined at Sushi Masa, Tupelo Honey Cafe and Adams Bistro(more than once). The last picture included was the first pizza Mike ever made on the Egg. It was a barbecue chicken pizza and it was divine!

On Saturday we had a date night at a new local restaurant that we will feature on VittleQuest very soon!


Sunday morning we went to the local gun club for Mike to try out his new toy!


Sunday afternoon we celebrated Pumpkin's 10th birthday by making pupcakes and watching her enjoy them! 
She is truly the light of our lives and every day with her is a real gift to us!

We had a wonderful relaxing weekend! Here's to a fast work week!

We went to Georgia for Easter to spend with Mike's family! 
We shared a lot of laughs, ate a lot of food and had a great time!


For Mike's April pre-planned date we had a picnic at the Noxubee National Wildlife Refuge. It was a beautiful day which Pumpkin quite enjoyed and we even spotted a huge alligator while driving in.



We celebrated Mike's birthday by eating out not once but twice! Crawfish and catfish for the birthday boy!


I got in a great walk during lunch at work. The sky was the most gorgeous shade of blue.


This past weekend we had a great day thrifting where we bought all of the items above(right) for less than $5! Saturday night we ate dinner at our favorite restaurant Huck's and then went to see the movie Neighbors where we laughed until we cried!

Life is crazy busy right now and it's getting SO close to our first wedding anniversary! We are so excited and ready to be on vacation!

Saturday we played tennis. It felt good to get back out on the court 
even if Mike did give me a run for my money!


Saturday afternoon we locked down our first wedding anniversary trip! Man time is flying by!!


Mike made the most amazing ribs for dinner! They literally fell off the bone! So GOOD!!


Sunday we cuddled with this little lovebug!


We took a long(4.35 mile), much longer than anticipated walk our at the South Farm Research farm on campus.


We ended the weekend with some more grilling of chicken breasts and veggies!

It was a wonderful weekend with several meals to remember! This whole 31 days of no eating out is going pretty well...I have lost 1.8 lbs and feel great and less gross since my sodium intake is down!

During the holiday season I love to try to make recipes that I have had at holiday parties(and loved, of course)! A couple of years ago at a work party at my director's home he served some mulled wine that he had made in the crock-pot. What I noticed first was the intoxicating smell coming from the kitchen which filled the home with a cinnamon and cardamom aroma that was amazing. After trying it, I was hooked! 

Mulled wine is also known as Glögg which is Scandinavian. It is traditionally made with raisins and mulling spices and heated over a fire. It is also very popular in Germany and Austria where they refer to it as Glühwein.

This year I finally got around to making some of my own! I searched around the web for recipes and tips and came up with a recipe that is a conglomeration of several. I have now made it on three different occasions since Thanksgiving and I think I have finally mastered it! Beware that this is an adult drink and the alcohol definitely does not cook out of it! Here is the recipe I will be making every year from now on! Enjoy

Ingredients

  • 1.5L Bottle Red Wine(I recommened Cabernet Sauvignon; use the cheapest possible, no need to waste the good stuff here!)
  • 3/4 cup spiced rum or brandy(here again I stress the cheap factor)
  • 1 cup Orange juice
  • 3/4 cup white Sugar
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Allspice
  • 5-6 whole Cinnamon Sticks
  • 1-2 peeled and pulled apart Oranges or Tangerines
  • 8 whole Cloves
  • 5 Cardamom Pods
  • Oranges for Garnish

Directions

  1. Place all ingredients(except garnish oranges) in crock-pot. Stir. 
  2. Heat on Low for 4 hours or High 2 hours then switch to warm.
  3. Strain out pods and serve with a cinnamon stick and orange for garnish!
